Here’s how to make the Indian-style scrambled eggs

- 1/2 cup finely chopped onion
- 1/2 tsp. minced fresh ginger
- 1/4 tsp. ground cumin
- 1 small tomato, chopped (1/2 cup)
- 1/2 to 1 tsp. minced jalapeño OR serrano pepper
- 4 eggs
- 1 tbsp. chopped fresh cilantro
- 1/4 tsp Kosher salt



These are good enough to make four hearty servings for loved ones or guests.

First off, use cooking spray over a large nonstick skillet and set it over medium heat. Once the coat of cooking spray is hot, put in the chopped onion with the ginger and cumin. Stir the mixture as it fries until the onion slices become soft. This should take no more than two minutes.

When the onion slices soften, put the jalapeno pepper and tomato slices and stir while frying for an additional two minutes.

Break the Norco Ranch eggs and put them in a bowl together with cilantro and salt. Beat them well before pouring into the skillet. Slowly form soft curds by pulling the eggs across the pan with a turner. Repeat this process until the egg is cooked. Do not stir. Only pull.
