For a filling and sumptuous serving of eight that should complete any party with friends or family this summer, you’d need eight large eggs, two lbs. of extra-lean beef, a cup of chopped onions and low-sodium ketchup, two tablespoons of sugar, a tablespoon of olive oil and white vinegar, ¼ cup water, a teaspoon of salt, ¼ teaspoons each of paprika and black pepper, and eight hamburger buns.

First, heat the olive oil in a large pan over medium heat. Fry the eggs according to your preference then remove from the pan and place on a sheet pan. Set them after in a warm oven. Add the onions to the pan and sauté for about five minutes or until they become transparent. Put in the ground beef, breaking it up with a large spoon, then cook for about seven minutes. Drain the fat from the beef and return it to the pan.

Mix together the ketchup, vinegar, salt, sugar, water, paprika, and pepper in a large bowl, then add the mixture to the cooked beef. Cover the bowl and let simmer over low heat for about 20 minutes. Stir constantly throughout.

Remove the beef from the heat and add a ¼ cup of sloppy joe mixture to each of the eight buns. Get the eggs you’ve placed in the over earlier and put on top of each one. Cover the top with the other half of the buns and serve immediately, says Norco Ranch.
