Try out this spicy Indian-style scrambled eggs recipe for World Egg Day
With World Egg Day just around the corner, it’s all but fitting to pay homage to the various egg delicacies on the planet. Today, let’s add a little spice to our recipes and learn how to prepare Indian Akoori or scrambled eggs.

The main spice is called garam masala, the main spice blend in Northern India cookery. This “warming mixture” is often dictated by region, but mostly contains black pepper, cardamom, chili, cinnamon, cloves, cassia leaf, coriander, and nutmeg. You’d need ¼ tsp of both garam masala and cumin.
Add a red onion, green or red onion, garlic gloves, a generous pinch of turmeric, tomatoes, chapatis, and seven eggs. Begin by heating a large frying pan over low-medium heat, then add butter. Fry the onion and garlic for about five minutes or until the onion becomes soft. Then add the garam masala and other spices and cook for another one to two minutes so that the aromatic flavor comes out.
When done, put in the tomatoes and cook for one minute before pouring in the eggs. Lower the heat, stir gently to scramble the eggs as they cook. Make sure to remove the pan from the heat while the eggs are still a little runny. Continue stirring for another minute until the eggs are just set. Stir through and serve with chapatis for a delectable Indian-style breakfast or brunch.
